  • 2 cups mixed dried fruits (raisins, cranberries, apricots)
  • 1 cup chopped nuts (walnuts, pecans) Optional, can be substituted with seeds.
  • 1 cup unsalted butter, softened Can substitute with margarine or a dairy-free option.
  • 1 cup sugar
  • 4 large eggs Use room temperature eggs for better integration.
  • 2 cups all-purpose flour Substitute with gluten-free flour if needed.
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp nutmeg
  • ¼ tsp salt
  • ½ cup milk Use almond or oat milk for dairy-free version.

Preparation

  • Gather all your ingredients and grease and flour your cake pan.

Mixing

  • In a mixing bowl, cream together the softened butter and sugar until light and fluffy (3-5 minutes).
  • Add the eggs one at a time, mixing well after each addition.
  • Whisk together the flour, baking powder, spices, and salt in a separate bowl.
  • Gradually add the dry ingredients to the wet mixture, alternating with the milk until just combined.
  • Gently fold in the mixed dried fruits and nuts with a spatula.

Baking

  • Pour the batter into the prepared cake pan and smooth the top.
  • Bake in a preheated oven for about 50-60 minutes, or until a toothpick comes out clean.
  • Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Serving

  • Once cooled, slice and serve your Christmas Cake with whipped cream or ice cream.

Notes

For best flavor, soak dried fruits in rum or orange juice the night before. Dust with powdered sugar or drizzle icing for presentation.
