Preparation

  • Gather all your ingredients. Wash and pit fresh cherries or thaw frozen cherries.
  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine cherries with granulated sugar and toss to coat.
  • In another bowl, cream softened butter and almond flour until light and fluffy.
  • Add eggs, almond extract, vanilla extract, and salt to the butter mixture, stirring until fully incorporated.
  • Gently fold in the macerated cherries.
  • Prepare the pie crust in a 9-inch pie dish.
  • Pour the cherry and almond mixture into the pie crust and spread it evenly.
  • Bake for 45-50 minutes until the filling is set and the top is lightly golden.
  • Let the pie cool completely at room temperature before slicing.
  • Serve with vanilla ice cream or whipped cream.
