Preparation

  • Gather all ingredients. Drain the maraschino cherries and pat them dry.
  • In a medium bowl, combine cream cheese, powdered sugar, and vanilla extract. Mix until smooth and free of lumps.
  • Gently fold in the drained maraschino cherries until they are well coated.
  • Shape spoonfuls of the mixture into bite-sized balls around each cherry.
  • Place the cherry bombs on a parchment-lined baking sheet and freeze for about 30 minutes until firm.

Coating

  • Melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  • Dip each frozen cherry bomb into the melted white chocolate, ensuring they are fully coated.
  • Roll the dipped cherry bombs in the crushed graham crackers and chopped pecans.
  • Return to the parchment-lined tray and refrigerate for at least one hour to allow chocolate to set.

Serving

Notes
