Ingredients
  

For the Cupcake Base

  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 cups unsalted butter, softened Make sure it's softened for easy creaming.
  • 2 large eggs Use room temperature for best results.
  • 0.5 cups milk Dairy or dairy-free alternative.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 1 cup cherries, pitted and chopped Fresh or canned, both work.

For Frosting

  • 0.5 cups vanilla frosting Store-bought or homemade.

Preparation

  • Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  • In a large mixing bowl, cream together the softened butter and sugar using an electric mixer for 2-3 minutes until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the butter mixture, alternating with the milk, mixing until just combined.
  • Gently fold in the chopped cherries.
  • Divide the batter evenly among the prepared cupcake liners, filling each about two-thirds full.

Baking

  • Bake in the preheated oven for 18-20 minutes, until a toothpick inserted comes out clean.

Serving

  • Allow the cupcakes to cool completely on a wire rack before frosting.
  • Top each cupcake with vanilla frosting and decorate as desired.
