  • 1 teaspoon vanilla extract

Preparation

  • Begin by gathering all your ingredients.
  • Measure out the all-purpose flour, cocoa powder, baking powder, and salt in a large mixing bowl. Whisk them together.
  • In another bowl, whisk the granulated sugar, vegetable oil, eggs, and vanilla extract until smooth.
  • Pour the wet mixture into the dry ingredients and stir until just combined. Avoid over-mixing.
  • Cover the bowl with plastic wrap and refrigerate the dough for about 30 minutes.

Baking

  • Preheat your oven to 350°F (175°C).
  • After chilling, use a tablespoon or cookie scoop to portion out the dough and roll each portion into a ball.
  • Roll each ball generously in powdered sugar before placing them on a baking sheet lined with parchment paper.
  • Bake in the preheated oven for 10-12 minutes. The edges should be firm while the centers remain soft.
  • Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature. They last about a week but are best enjoyed fresh. You can also freeze cookie dough for up to three months.
