Ingredients
  

For the Éclair Dough

  • 1 cup water
  • ½ cup unsalted butter at room temperature
  • 1 cup all-purpose flour
  • 4 large eggs at room temperature

For the Filling and Topping

  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 1 cup dark chocolate chips
  • ¼ cup milk

Preparation

  • Gather all your ingredients first to make the process smooth.
  • Preheat your oven to 400°F (200°C).
  • In a saucepan, combine water and butter over medium heat. Bring to a boil.
  • Once melted, reduce heat and stir in flour until smooth and forms a ball.
  • Remove from heat; let it cool slightly and then add eggs one at a time, mixing well.
  • Pipe the dough onto a lined baking sheet forming 4-inch strips.

Baking

  • Bake for 25-30 minutes or until golden brown without opening the oven door.
  • Remove and let them cool completely on a wire rack.

Filling and Topping

  • Whip the heavy cream with powdered sugar until soft peaks form.
  • Fill each cool éclair with whipped cream using a piping tip.
  • Melt the dark chocolate chips with milk over low heat and drizzle over filled éclairs.

Notes

Store filled éclairs in an airtight container in the refrigerator for 2-3 days. Unfilled éclairs can be frozen for later filling.
