  • ½ teaspoon baking powder

  • 1 ½ cups sugar
  • 1 large egg Can substitute with flaxseed meal or applesauce for vegan option
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract Optional, can be omitted for nut-free version
  • ½ teaspoon salt

Instructions
 

Preparation

  • Gather all your ingredients on the countertop for easy access.
  • Preheat your oven to 375°F (190°C).

Making the Dough

  • In a mixing bowl, mix together the flour, baking soda, and baking powder. Set aside.
  • In a separate bowl, cream together softened butter and sugar until light and fluffy, about 2-3 minutes.
  • Beat in the egg along with the vanilla and almond extracts until combined.
  • Gradually add the dry mixture to the wet ingredients and fold together gently until combined.

Shaping and Baking

  • Scoop rounded teaspoonfuls of dough and roll into balls. Place on ungreased cookie sheets, spacing evenly.
  • Flatten each dough ball using the bottom of a glass or your hand and sprinkle decorations on top.
  • Bake in the preheated oven for 8 to 10 minutes until edges are light golden.

Cooling

  • Let cookies cool on the sheet for a minute before transferring to wire racks.
  • Allow cookies to cool entirely to help them firm up.

Notes

Store cookies in an airtight container at room temperature for about a week. For longer storage, freeze them.
