Instructions
Preheat the oven to 350°F (175°C).
In a saucepan, combine cranberries, sugar, water, and lemon juice. Cook over medium heat until cranberries burst (about 10 minutes).
Mix cornstarch with a little water and add to the saucepan. Stir until thickened, then remove from heat.
Stir in butter and vanilla extract until smooth.
Pour the filling into the tart shell and spread evenly.
Bake for 25 minutes or until the filling is bubbly and set.
Cool for at least 30 minutes before serving. Serve warm or chilled.
Notes
For extra flavor, add a dash of cinnamon or nutmeg to the cranberry mixture. Serve with whipped cream or vanilla ice cream for a festive touch.
