Ingredients
  

Cranberry Filling

  • 2 cups fresh cranberries
  • 1 cup sugar
  • ¼ cup water
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch mixed with a little water
  • 1 tbsp butter
  • ½ tsp vanilla extract

Tart Base

  • 1 pre-made tart shell 9-inch size

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a saucepan, combine cranberries, sugar, water, and lemon juice. Cook over medium heat until cranberries burst (about 10 minutes).
  • Mix cornstarch with a little water and add to the saucepan. Stir until thickened, then remove from heat.
  • Stir in butter and vanilla extract until smooth.
  • Pour the filling into the tart shell and spread evenly.
  • Bake for 25 minutes or until the filling is bubbly and set.
  • Cool for at least 30 minutes before serving. Serve warm or chilled.

Notes

For extra flavor, add a dash of cinnamon or nutmeg to the cranberry mixture. Serve with whipped cream or vanilla ice cream for a festive touch.
