Ingredients

Mini Fruit Tarts

  • 12 mini tart shells store-bought or homemade
  • 1 cup pastry cream or vanilla pudding
  • 1 cup fresh fruit kiwi, raspberries, blueberries, etc.

Instructions
 

  • Cookies: In a bowl, cream together butter and sugar until fluffy. Add egg and vanilla. Mix in flour until dough forms. Chill 30 minutes, roll out, and cut into festive shapes. Bake at 350 °F (175 °C) for 8–10 minutes. Decorate with icing or sprinkles.
  • Peppermint Fudge: Melt chocolate chips and condensed milk together over low heat. Stir in peppermint extract. Pour into a lined pan and top with crushed candy canes. Chill until firm, then cut into squares.
  • Truffles: Mix crushed cookies and cream cheese until smooth. Roll into small balls and chill 15 minutes. Dip in melted chocolate and top with sprinkles.
  • Mini Cupcakes: Prepare cake mix as directed. Fill mini cupcake liners halfway and bake at 350 °F for 10–12 minutes. Cool and decorate with festive frosting.
  • Mini Fruit Tarts: Fill pre-baked tart shells with pastry cream or pudding. Top with colorful fresh fruit. Chill until ready to serve.
