  • 1 whole whole fish (such as snapper or trout) Choose fish that holds up well to roasting.
  • 2 tablespoons olive oil Can substitute with avocado or grapeseed oil.
  • 1 lemon, sliced Provides a zesty flavor.
  • Fresh herbs (such as parsley, dill, or thyme) Customize with your favorite herbs.
  • to taste Salt and pepper Essential for enhancing flavor.
  • 1 clove Garlic, minced (optional) Can be omitted if desired.
  • Vegetables for roasting (such as asparagus, bell peppers, or zucchini, optional) Use whatever vegetables you have on hand.

Preparation

  • Preheat your oven to 400°F (200°C).
  • Rinse your chosen fish under cold water, then pat it dry with paper towels.

Cooking

  • Place the fish in the center of a large piece of aluminum foil.
  • Drizzle olive oil over the fish and season generously with salt and pepper. Add minced garlic if using.
  • Stuff lemon slices and fresh herbs inside the cavity of the fish.
  • If using vegetables, chop them into bite-sized pieces and spread them around the fish on the foil.
  • Wrap the foil tightly around the fish and vegetables.
  • Transfer to a baking sheet and bake for 25-30 minutes or until the flesh flakes easily with a fork.
  • Carefully unwrap the foil, letting the steam escape before serving.

Notes

Store leftover fish in an airtight container for up to 2 days. For best results, reheat in an oven wrapped in foil.
