  • 2 cups strawberries, hulled and sliced
  • 2 kiwis, peeled and diced
  • 1 cup pineapple, diced
  • 1 orange, juiced
  • 1 tablespoon honey (optional)
  • Fresh mint leaves for garnish (optional)

Preparation

  • Gather all your ingredients. Rinse the strawberries, hulled and slice them. Peel and dice the kiwis and chop the pineapple into small pieces.
  • In a large mixing bowl, combine the sliced strawberries, diced kiwis, and pineapple. Make sure the fruits are evenly mixed.
  • In a smaller bowl, whisk together the freshly squeezed orange juice and honey (if you’re using it).
  • Pour the juice mixture over the fruit combination in the large bowl and gently toss the ingredients together.
  • Cover the bowl with plastic wrap and place it in the refrigerator. Allow the salad to chill for at least 30 minutes.
  • After chilling, taste your Christmas fruit salad and adjust the sweetness or acidity if necessary.
  • Just before serving, add fresh mint leaves on top for garnish.
  • Spoon the Christmas fruit salad into bowls and serve.

Notes

For a vegan version, simply omit the honey. Store leftovers in an airtight container; best when fresh, but can last 2–3 days in the refrigerator.
