Preparation

  • Start by washing the kale thoroughly to remove any dirt.
  • Chop the kale into bite-sized pieces.
  • Carefully slice the pomegranate in half and tap the back to release the seeds.
  • Chop the walnuts coarsely.
  • Crumble the feta cheese.
  • In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.

Assembly

  • In a large bowl, combine chopped kale, pomegranate seeds, chopped walnuts, and crumbled feta.
  • Pour the dressing over the salad and toss gently to combine.
  • Taste and adjust seasoning as needed.
  • Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
