  • 2 large egg whites Substitute with aquafaba for vegan option.
  • ¼ cup granulated sugar
  • ¼ teaspoon cream of tartar Stabilizes the meringue.
  • Food coloring (various colors) Use natural options for no artificial colors.

Fillings

  • Filling of choice (e.g., buttercream, ganache, fruit preserves) Experiment with different flavors.

Instructions
 

Preparation

  • Start by ensuring all your ingredients are measured and ready.
  • Sift together the powdered sugar and almond flour to remove lumps.

Making the Meringue

  • Whip the egg whites in a clean, dry bowl until foamy.
  • Gradually add the granulated sugar while continuing to whip to stiff peaks.
  • Add the cream of tartar to stabilize the meringue.

Combining Mixtures

  • Gently fold the sifted almond flour and powdered sugar mixture into the meringue.
  • Fold until just combined, being careful not to deflate the meringue.

Adding Color

  • Divide the macaron mixture into separate bowls and add food coloring to each.

Piping and Resting

  • Transfer the colored batter into piping bags and pipe small circles onto a lined baking sheet.
  • Allow the piped macarons to sit at room temperature for 30-60 minutes until they form a skin.

Baking

  • Preheat the oven to 300°F (150°C) and bake the macarons for 15-20 minutes.
  • They should lift off the parchment paper easily once cooled.

Cooling and Filling

  • Allow the macarons to cool completely on the baking sheet.
  • Spread or pipe your chosen filling onto one macaron shell and sandwich with another.

Notes

Store in an airtight container. In humid areas, refrigerate for better texture. Freeze unfilled macarons for later use.
