Preparation

  • Gather all necessary ingredients and tools. Pre-measure the flour, baking powder, salt, and sugar.
  • Grease the madeleine pan lightly with cooking spray or melted butter.

Create the Base

  • In a mixing bowl, whisk together the flour, baking powder, and salt until fully combined.

Mix the Wet Ingredients

  • In a separate large bowl, combine the melted butter and granulated sugar and whisk until smooth (about 2-3 minutes).

Add Eggs

  • Add the eggs one at a time to the butter-sugar mixture, whisking thoroughly after each addition.

Flavor It Up

  • Add the vanilla extract and lemon zest to enhance the flavor.

Combine Mixtures

  • Gradually fold the dry mixture into the wet ingredients using a spatula, being careful not to over-mix.

Fill the Pan

  • Using a tablespoon or piping bag, fill each mold of the greased madeleine pan about 3/4 full.

Bake

  • Preheat the oven to 375°F (190°C). Bake for 10-12 minutes until golden and springy.

Cool and Serve

  • Remove from the oven, let cool for a few minutes, then turn the pan upside down to release madeleines onto a cooling rack.
  • Dust with powdered sugar or dip in chocolate, if desired, before serving.

Notes

For variation, consider adding spices, or nuts to the batter. Store in an airtight container for up to 3 days.
