Ingredients

  • 6 large eggs
  • ½ cup milk or cream
  • 1 cup shredded cheese cheddar, mozzarella, or Swiss
  • ½ cup cooked ham or bacon chopped
  • ¼ cup red bell pepper diced
  • ¼ cup green onion chopped
  • 12 mini pastry shells store-bought or homemade
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F (190°C). Lightly grease a 12-cup muffin tin or line with mini pastry shells.
  • In a mixing bowl, whisk together eggs, milk, salt, and pepper until smooth.
  • Stir in shredded cheese, diced bell pepper, green onions, and chopped ham or bacon.
  • Pour the mixture evenly into the pastry shells, filling each about three-quarters full.
  • Bake for 20–25 minutes, or until the tops are puffed and lightly golden.
  • Remove from the oven, let cool slightly, and serve warm or at room temperature.

Notes

These mini quiches can be customized with your favorite fillings—try spinach, mushrooms, or sun-dried tomatoes for variety. Store leftovers in the fridge for up to 3 days or freeze for up to 2 months. Reheat in the oven or microwave before serving.
