  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk Can substitute with non-dairy milk.
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water This adds moisture to the cake.
  • 1 tablespoon instant espresso powder

Frosting Ingredients

  • 1 cup unsalted butter Softened for easy mixing.
  • 3 cups powdered sugar Sift for a smooth texture.
  • ½ cup cocoa powder Use high-quality cocoa for frosting.
  • ¼ cup brewed coffee Should be cooled before adding.

Preparation

  • Start by gathering all your ingredients and preheat your oven to 350°F (175°C).
  • Grease and flour two 9-inch round cake pans.

Mixing Ingredients

  • In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk together.
  • Add the eggs, milk, oil, and vanilla extract to the dry mixture and mix on medium speed until smooth.
  • Carefully stir in the boiling water and espresso powder until fully incorporated.

Baking

  • Pour the batter evenly into the prepped pans and bake for 30 to 35 minutes.
  • Let the cakes cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.

Making the Frosting

  • Beat the unsalted butter until creamy. Gradually add the powdered sugar and cocoa powder, mixing well.
  • Mix in the brewed coffee until the frosting is smooth.

Frosting the Cake

  • Once the cake layers are completely cooled, frost between the layers, the top, and sides of the cake.

Notes

Store tightly wrapped in plastic wrap or in an airtight container in the refrigerator for 3-4 days. Can freeze for up to 3 months.
