Ingredients
  

For the Pancakes

  • 1 ½ cups all-purpose flour
  • 2 Tbsp sugar
  • 1 Tbsp baking powder
  • 1 ¼ cups milk or more if needed
  • 1 large egg
  • 2 Tbsp melted butter plus more for cooking

For the Cinnamon Rolls

  • 1 can refrigerated cinnamon rolls with icing included

For the Scrambled Eggs and Bacon

  • 8 eggs lightly whisked
  • 8 slices bacon crispy

For the Hot Chocolate

  • 4 cups milk
  • ½ cup chocolate chips semi-sweet or milk chocolate
  • 2 Tbsp unsweetened cocoa powder
  • 2 Tbsp sugar
  • ½ tsp ground cinnamon optional
  • whipped cream or marshmallows for topping

Instructions
 

  • Preheat oven according to cinnamon roll package directions. Bake cinnamon rolls until golden brown. Set aside and drizzle with icing.
  • In a bowl, whisk together flour, sugar, baking powder, milk, egg, and melted butter for pancakes. Mix until smooth but not overmixed.
  • Heat a buttered skillet or griddle over medium heat. Pour 1/4 cup of batter per pancake and cook until bubbles form. Flip and cook until golden. Keep warm.
  • In a frying pan, cook bacon until crispy. Drain on paper towels. Scramble eggs in a separate pan with a pinch of salt and pepper until light and fluffy.
  • For the hot chocolate, heat milk in a saucepan until warm. Whisk in chocolate chips, cocoa powder, sugar, and cinnamon. Stir until smooth and creamy. Serve topped with whipped cream or marshmallows.
  • Arrange all items on a large platter or breakfast board — pancakes, eggs, bacon, cinnamon rolls, and mugs of hot chocolate — and enjoy your Christmas brunch!

Notes

For extra holiday flair, sprinkle powdered sugar over the pancakes and add crushed candy canes to the hot chocolate. Serve with fruit or yogurt for balance.
