  • 9 cups Chex cereal
  • 1 cup semi-sweet chocolate chips
  • ½ cup smooth peanut butter Can substitute almond butter or sunflower seed butter for nut allergies.
  • ¼ cup butter
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar Can replace with a powdered sugar substitute.
  • 1 cup festive sprinkles

Preparation

  • Gather all your ingredients and equipment including a very large mixing bowl and a saucepan.
  • Measure out 9 cups of Chex cereal and place it in your large mixing bowl.
  • In a medium saucepan, combine chocolate chips, peanut butter, and butter. Melt over medium heat, stirring continuously for about 5 minutes until smooth.
  • Remove from heat and stir in vanilla extract.
  • Pour the melted chocolate mixture over the Chex cereal in three stages, gently folding to coat.
  • In a large plastic bag, combine powdered sugar and festive sprinkles, shake to mix.
  • Add the coated Chex to the bag with powdered sugar in stages, shaking to coat evenly.
  • Spread the mixture on a wax paper-lined baking sheet.
  • Chill in the fridge for about 1 hour to set.

Notes

Store in an airtight container at room temperature for up to 2 weeks. Can freeze for up to 3 months.
