  • 1 cup cooked rice Brown or white for preference.
  • 1 cup ground turkey Can substitute with lentils or quinoa for vegetarian option.
  • ½ cup diced tomatoes Canned or fresh.
  • ½ cup corn Canned, frozen, or fresh.
  • ½ cup black beans Canned, drained, and rinsed.
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ½ cup shredded cheese Cheddar or a blend.
  • to taste Salt and pepper

Preparation

  • Begin by gathering all your ingredients to make the cooking process smooth.
  • Preheat your oven to 375°F (190°C).
  • Cut the tops off the bell peppers and remove the seeds.

Cooking

  • In a skillet over medium heat, cook the ground turkey until browned, seasoning with salt and pepper.
  • Add the cooked rice, diced tomatoes, corn, and black beans to the skillet. Stir to combine.
  • Sprinkle cumin and chili powder over the mixture. Season with more salt and pepper as needed. Stir for about 5 minutes.
  • Stuff the bell peppers with the turkey and vegetable mixture, packing them generously.
  • Arrange stuffed peppers in a baking dish and sprinkle with shredded cheese.
  • Bake for about 30 minutes or until peppers are tender and cheese is bubbly and golden.

Serving

  • Allow the stuffed peppers to cool slightly before serving and enjoy with family and friends.
