Ingredients
  

For the cake

  • 1 cup strong brewed coffee, cooled Use a strong brew for best flavor.
  • ½ cup coffee liqueur (such as Kahlúa) Substitute with extra brewed coffee for a non-alcoholic version.
  • 24 pieces ladyfinger cookies Gluten-free ladyfingers can be used if needed.
  • 2 cups mascarpone cheese Low-fat cream cheese can be substituted.
  • 1 cup heavy cream
  • ½ cup granulated sugar Agave syrup can be used as a substitute.
  • 1 teaspoon vanilla extract
  • 2 tablespoons cocoa powder
  • ¼ cup dark chocolate shavings

Instructions
 

Preparation

  • Gather all ingredients and brew a strong cup of coffee. Let it cool.
  • In a medium bowl, mix the cooled coffee with the coffee liqueur.
  • Briefly dip each ladyfinger cookie into the coffee mixture to moisten.
  • Layer half of the dipped ladyfingers in the bottom of a baking dish.
  • Whip the heavy cream in a separate bowl until stiff peaks form.
  • In another bowl, combine mascarpone cheese, granulated sugar, and vanilla extract, then mix until smooth.
  • Gently fold the whipped cream into the mascarpone mixture.
  • Spread half of the mascarpone mixture over the first layer of ladyfingers.
  • Repeat with the remaining ladyfingers and mascarpone mixture.
  • Dust the top with cocoa powder and sprinkle with dark chocolate shavings.
  • Cover and refrigerate for at least 4 hours before serving.

Notes

For a vegan version, use a homemade vegan mascarpone alternative and agave syrup. To serve, pair with coffee or espresso, whipped cream, or fresh berries.
