Macaron Ingredients

  • 3 cups powdered sugar
  • 1.5 cups almond flour Can be substituted with sunflower seed flour for a nut-free version.
  • 3 large egg whites For best results, use fresh egg whites.
  • 0.25 cups granulated sugar
  • 0.5 teaspoons vanilla extract
  • 0.5 teaspoons almond extract
  • 1 drops green food coloring Adjust amount for desired color.
  • 1 batch buttercream frosting For filling.
  • to taste sprinkles For decoration.

Preparation

  • Assemble all your ingredients and measure out the powdered sugar and almond flour. Sift them together into a bowl and set aside.
  • In a clean bowl, whip the egg whites until they reach a soft peak.
  • Gradually add the granulated sugar while continuing to whip until you reach stiff peaks, about 5 minutes at medium-high speed.
  • Gently fold in the vanilla and almond extracts, then add the green food coloring.
  • Sift the almond flour and powdered sugar mixture into your egg whites and gently fold to combine without overmixing.

Baking

  • Transfer the macaron batter into a piping bag and pipe small circles onto a lined baking sheet, leaving space in between.
  • Let the piped macarons sit at room temperature for 30-60 minutes to form a skin.
  • Preheat your oven to 285°F (140°C) and bake the macarons for 18-20 minutes.
  • After baking, allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Assembly

  • Once the macarons are completely cool, pipe buttercream frosting onto the flat side of half the macarons and sandwich with the remaining halves.
  • Decorate with sprinkles or edible glitter for a festive touch.

Notes

Store macarons in an airtight container at room temperature for up to three days. Can be refrigerated or frozen for longer storage.
