Ingredients
  

Salad Base

  • 2 cups mixed greens Rinse thoroughly before use
  • 1 cup orange segments About 2 medium oranges
  • 1 cup grapefruit segments About 1 medium grapefruit
  • ½ cup pomegranate seeds
  • ¼ cup red onion, thinly sliced Soak in cold water if strong flavor is preferred
  • ¼ cup feta cheese, crumbled Optional for a dairy-free version
  • ¼ cup walnuts, chopped Can be replaced with sunflower or pumpkin seeds

Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • to taste Salt and pepper Adjust according to preference

Preparation

  • Gather all your ingredients and rinse the mixed greens thoroughly under cold water.
  • Dry the greens using a salad spinner or pat them with a clean kitchen towel.
  • Segment the oranges and grapefruits by cutting off the tops and bottoms, then removing the peel.
  • Thinly slice the red onion. If the flavor is too strong, soak the pieces in cold water.
  • In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper for the dressing.
  • In a large bowl, combine mixed greens, orange segments, grapefruit segments, pomegranate seeds, and sliced red onion.
  • Drizzle the dressing over the salad and toss gently.
  • Top with crumbled feta cheese and chopped walnuts before serving.

Notes

Serve immediately for the best flavor and texture. Add a splash of fresh citrus juice to the dressing for extra flavor. Present in a clear bowl to showcase the vibrant colors.
