  • 2 pounds chuck roast Trimmed of excess fat
  • 2 tablespoons olive oil For searing the roast
  • 1 unit onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 4-6 cups water or broth To cover the roast halfway

For the Tacos

  • 8-10 units tortillas Corn or flour tortillas
  • Toppings (e.g., chopped cilantro, diced tomatoes, shredded lettuce, avocado, cheese, sour cream) Customize as desired

Preparation

  • Gather all your ingredients. Ensure the chuck roast is trimmed, and chop the onion and garlic. Measure out the spices.
  • Heat the olive oil in a large pot over medium heat.

Searing the Roast

  • Season the roast generously with salt, pepper, chili powder, and cumin.
  • Sear the roast on all sides until beautifully browned, about 5-7 minutes.

Cooking

  • Add the chopped onion and minced garlic to the pot and stir until the onions become translucent, about 3-4 minutes.
  • Pour in enough water or broth to cover the roast halfway, then bring to a gentle simmer. Cover the pot with a lid.
  • Turn the heat down to low and allow the roast to cook slowly for 4-6 hours.
  • Check the roast for doneness; it should shred easily with a fork.
  • Once cooked, remove the roast from the pot, shred into bite-sized pieces, and incorporate some cooking liquid for moisture.

Assembly

  • Warm tortillas over medium heat until pliable.
  • Assemble tacos by laying shredded beef in each tortilla, adding preferred toppings.

Serving

  • Serve tacos immediately while warm. Enjoy!

Notes
