Ingredients
  

For the Crust

  • 1 tablespoon ground cinnamon
  • ½ cup cup granulated sugar
  • 2 (8-oz) packages crescent roll dough or sheets refrigerated

For the Cheesecake Filling

  • 16 ounces full-fat cream cheese softened
  • ¾ cup granulated sugar
  • 1 large egg
  • teaspoons vanilla extract
  • 3 tablespoons unsalted butter melted and slightly cooled

Instructions
 

  • Preheat oven to 350 °F (175 °C).
  • Unroll crescent roll dough onto a parchment-lined baking sheet. Flatten into one large rectangle, pinching seams together to create a seamless crust foundation.
  • In a small bowl, combine cinnamon and sugar for the churro-style topping. Brush crust with melted butter, and sprinkle a generous amount of cinnamon-sugar mixture over it.
  • Bake the crust for about 10-12 minutes, until golden brown and slightly puffed.
  • While the crust bakes, in another bowl beat softened cream cheese until smooth. Add sugar, egg, vanilla extract, and melted butter; mix until creamy and well combined.
  • Once crust has cooled slightly, pour the cream cheese filling over the crust and smooth the top with a spatula.
  • Sprinkle additional cinnamon-sugar mixture over the cheesecake filling for extra churro flavor and topping texture.
  • Bake again for 20-25 minutes, until the edges are set but the center remains slightly wobbly.
  • Remove from oven and allow to cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours (or overnight for best results).
  • Slice the chilled cheesecake, garnish as desired (whipped cream, fruit, caramel, etc.), and serve.

Notes

Store the Churro Cheesecake covered in the refrigerator for up to 5 days. If freezing, wrap tightly and freeze for up to 3 months; thaw overnight in the fridge before serving. Variations include adding chopped nuts, orspiced sugar for the topping, or substituting ingredients to accommodate dietary needs.
