Preparation

  • Start by gathering all necessary ingredients. Rinse the rice under cold water to remove excess starch.

Cooking

  • In a pot, bring the 4 cups of water and 1 teaspoon of salt to a boil.
  • Once boiling, add the rinsed rice, stir briefly, then cover the pot.
  • Reduce heat to low and let the rice simmer for 18-20 minutes, until water is absorbed and rice is tender.
  • Remove from heat and let sit covered for 5 minutes to steam.
  • Fluff the rice gently with a fork.

Mixing & Serving

  • In a large bowl, combine fluffed rice with chopped cilantro, lime juice, and olive oil. Stir gently.
  • Serve warm.

Notes

For a creamier texture, mix in a spoonful of butter with the olive oil. Store leftovers in an airtight container in the fridge for up to 4 days or freeze for 2-3 months.
