Ingredients
  

For the Marinade & Steak

  • 1 pound flank steak Can substitute with skirt steak or chicken breast.
  • ¼ cup fresh lime juice (approximately 2 limes)
  • ¼ cup olive oil
  • ¼ cup fresh cilantro, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For Assembly

  • 1 cup cooked rice (white or brown) Can substitute with quinoa or cauliflower rice.
  • 1 can black beans, rinsed and drained Can substitute with pinto beans or chickpeas.
  • 1 cup corn (fresh, frozen, or canned) Can skip or use diced bell peppers instead.
  • 1 cup cherry tomatoes, halved
  • 1 avocado sliced
  • ½ cup red onion, diced
  • ½ cup feta cheese, crumbled (optional) Can substitute with goat cheese.
  • Extra cilantro for garnish
  • Lime wedges for serving

Instructions
 

Preparation

  • Gather all your ingredients and clean your workspace.
  • In a medium bowl, whisk together lime juice, olive oil, cilantro, garlic, cumin, chili powder, salt, and black pepper for the marinade.
  • Add the flank steak to the marinade, cover, and refrigerate for at least 30 minutes (ideally 2-4 hours).

Cooking the Components

  • Cook rice according to package instructions.
  • In a saucepan, heat black beans over medium heat for about 5 minutes.
  • Boil or sauté fresh corn until tender or heat frozen corn according to instructions.
  • Preheat your grill or grill pan to medium-high (around 400°F).

Grilling the Steak

  • Remove steak from marinade, allowing excess to drip off. Discard the marinade.
  • Grill steak for 4-5 minutes per side for medium-rare (130°F).
  • Let the steak rest for 5-10 minutes, then slice thinly against the grain.

Assembling the Bowls

  • Divide cooked rice into bowls and layer with black beans, corn, cherry tomatoes, avocado, and red onion.
  • Top each bowl with sliced steak and feta cheese if desired.
  • Garnish with fresh cilantro and lime wedges before serving.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. For longer storage, freeze components separately.
