Preparation

  • Start by gathering all the ingredients mentioned above. Chop the apples into small, even pieces to ensure they bake uniformly.
  • Preheat your oven to 350°F (175°C) for a hot oven helping to get that golden-brown crust you want.
  • In a large bowl, combine the pancake mix, milk, and eggs. Stir until just combined, being careful not to overmix; the batter should be slightly lumpy.
  • Fold in the diced apples, cinnamon, and brown sugar until evenly distributed throughout the batter.
  • Take a greased baking dish and pour the apple pancake mixture evenly into it, using a spatula to spread it out evenly.

Baking

  • Drizzle the maple syrup and vanilla extract on top of the batter.
  • Place the baking dish in the oven and bake for 25 to 30 minutes. The bake is done when the top is golden brown, and a toothpick inserted comes out clean.
  • Once baked, let the dish cool for about 5–10 minutes to make serving easier.
  • Cut the bake into squares, and serve warm, optionally adding whipped cream or more syrup as desired.

Notes

Store the bake in the refrigerator for up to 3 days or freeze for longer storage. Reheat in the microwave for about a minute to enjoy warm.
