Ingredients
  

For the banana bread

  • 3 pieces overripe mashed bananas Ensure they are very ripe for sweetness.
  • 4 tbsp melted vegan butter
  • ¾ cup maple syrup Can substitute with agave syrup or honey.
  • 1 cup unsweetened almond or oat milk Other non-dairy options like soy or coconut milk can be used.
  • 1 tsp vanilla extract
  • 1 ½ tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ¼ tsp salt
  • 1 ½ cup all-purpose flour Can use regular or gluten-free flour.
  • 1 cup old fashioned rolled oats

For the cinnamon filling

  • 4 tbsp melted vegan butter
  • cup light brown sugar
  • 2 tbsp cinnamon

For the glaze

  • ¾ cup powdered sugar
  • 2 tbsp melted vegan butter
  • 2 oz softened vegan cream cheese

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan with vegan butter or line it with parchment paper.
  • In a large bowl, mash the overripe bananas with a fork until smooth.
  • Add melted vegan butter, maple syrup, almond or oat milk, and vanilla extract to the mashed bananas and whisk together.

Mixing the dry ingredients

  • In another bowl, mix together flour, baking powder, baking soda, cinnamon, and salt.
  • Gradually fold the dry ingredients into the wet ingredients, being careful not to overmix.

Cinnamon Filling

  • In a small bowl, combine melted vegan butter, light brown sugar, and cinnamon for the filling.

Layering the bread

  • Pour half of the banana bread batter into the prepared loaf pan.
  • Drizzle half of the cinnamon filling over the batter and use a knife to swirl.
  • Pour the remaining batter on top and repeat with the rest of the cinnamon filling.
  • Gently swirl the top layer of the batter with a knife.

Baking

  • Bake in the preheated oven for 50-60 minutes, checking for doneness with a toothpick.
  • Let the bread cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.

Glazing

  • Whisk together powdered sugar, melted vegan butter, and vegan cream cheese for the glaze and drizzle over the cooled bread.

Notes

For optimal results, allow to cool completely before cutting. Store properly to maintain freshness.
