Preparation

  • Gather all your ingredients: oats, protein powder, cinnamon, eggs, almond milk, and maple syrup.
  • In a blender, combine the oats, protein powder, cinnamon, eggs, almond milk, and maple syrup. Blend until smooth and creamy.

Cooking

  • Heat a non-stick skillet on medium heat for a few minutes.
  • Pour a small amount of the batter into the skillet and swirl it around to coat evenly.
  • Cook the crepe for 2-3 minutes until edges lift, then flip and cook for an additional 1-2 minutes.
  • Repeat the process with the remaining batter, adjusting the heat as necessary.
  • Stack the cooked crepes on a plate.
  • Add your favorite toppings like fruits, yogurt, or syrup.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in a skillet or microwave. For freezing, lay crepes flat with parchment in between.
