  • 1 teaspoon cinnamon
  • ½ cup brown sugar
  • ½ teaspoon salt
  • 2 cups milk Use almond milk for a dairy-free version.
  • 2 whole eggs Flax eggs can be used for vegan version.
  • 1 teaspoon vanilla extract
  • ½ cup chopped nuts Optional, substitute with chocolate chips if preferred.
  • ½ cup raisins Optional, can be replaced with other dried fruits.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine rolled oats, cinnamon, brown sugar, and salt.
  • In a separate bowl, whisk together milk, eggs, and vanilla extract until smooth.
  • Pour the wet mixture into the dry ingredients and stir until combined but do not overmix.
  • Fold in nuts and raisins if using.
  • Grease a baking dish with butter or non-stick spray.
  • Pour the oatmeal mixture into the prepared dish, smoothing the top with a spatula.
  • Bake for 30-35 minutes until the top is golden brown and the center is set.
  • Check for doneness with a toothpick; it should come out clean.
  • Let cool for a few minutes before serving.

Notes

For a vegan alternative, replace milk with almond milk and eggs with flax eggs. You can also customize with seasonal fruits or spices.
