Preparation

  • Start by gathering all your ingredients. Ensure they are measured accurately, as accuracy is key to baking.

Mixing

  • In a large bowl, combine ground almonds, powdered sugar, and ground cinnamon. Mix thoroughly until evenly blended.
  • In a separate bowl, beat the egg whites until they form stiff peaks.
  • Gently fold the beaten egg whites into the almond mixture.
  • Pour in the lemon juice and stir gently until combined and a cohesive dough forms.

Rolling and Cutting

  • Dust a clean surface with powdered sugar and roll out the dough to about 1/2 cm thickness.
  • Using a star-shaped cookie cutter, cut out star shapes from the rolled dough.

Baking

  • Preheat your oven to 150°C (300°F) and bake the cookies for 15-20 minutes.
  • Once baked, remove the cookies from the oven and let them cool on a wire rack.
  • Dust the tops with extra powdered sugar before serving.

Notes

Store in an airtight container at room temperature. Can freeze for up to three months.
