Preparation

  • Gather all your ingredients and preheat your oven to 350°F (175°C). Grease or line an 8x8-inch baking pan with parchment paper.
  • In a large bowl, whisk together the melted butter and packed light brown sugar until well combined.
  • Add the egg, honey, and vanilla extract to the mixture. Whisk until fully combined and smooth.
  • In another bowl, combine the flour, salt, and ½ teaspoon of ground cinnamon.
  • Gradually add the dry ingredients to the wet ingredients. Stir gently until just combined, being careful to avoid overmixing.
  • Pour the batter into the prepared pan and spread it evenly.
  • In a small bowl, mix the granulated sugar with the remaining ½ teaspoon of cinnamon, then sprinkle it over the batter.
  • Bake in the preheated oven for 22 to 25 minutes until a toothpick inserted comes out clean or with a few moist crumbs.
  • Allow the blondies to cool completely in the pan before cutting into squares or rectangles.

Notes

Store in an airtight container at room temperature for 3-5 days. For longer storage, refrigerate or freeze individually wrapped pieces.
