Ingredients
  

For the Bread

  • 2 large ripe bananas, mashed (about 1 cup) Use very ripe bananas for the best flavor.
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • ½ cup unsalted butter, melted (or coconut oil for a dairy-free option)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour For a gluten-free option, use a 1:1 gluten-free baking flour blend.
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • ¼ cup milk (or almond milk for dairy-free)

For the Cinnamon Swirl

  • ¼ cup granulated sugar
  • 1 ½ teaspoons cinnamon
  • 1 tablespoon brown sugar

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  • In a mixing bowl, mash 2 large ripe bananas until smooth. Add ½ cup melted butter, ½ cup granulated sugar, ¼ cup brown sugar, 2 eggs, and 1 teaspoon vanilla extract; mix well.
  • In a separate bowl, combine 1 ½ cups all-purpose flour, 1 teaspoon baking soda, ½ teaspoon salt, and ½ teaspoon cinnamon.
  • Gradually fold the dry ingredients into the wet ingredients until just combined, being careful not to overmix.

Cinnamon Swirl

  • In a small bowl, mix together ¼ cup granulated sugar, 1 ½ teaspoons cinnamon, and 1 tablespoon brown sugar.
  • Pour half of the batter into the prepared loaf pan, sprinkle half of the cinnamon sugar mixture over it, then layer the remaining batter and top with the rest of the cinnamon sugar.
  • Use a knife or skewer to gently swirl the layers.

Baking and Cooling

  • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let it cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

Optional: Sprinkle additional cinnamon sugar on top before baking for added crunch. Experiment with add-ins like nuts or chocolate chips.
