Ingredients
  

For the Banana Bread

  • 3 ripe bananas (mashed) Ensure they are very ripe for the best flavor.
  • cup melted butter Can be substituted with coconut oil for dairy-free version.
  • 1 teaspoon baking soda
  • pinch salt
  • ¾ cup sugar (white or brown) You can decrease sugar for a lighter version.
  • 1 large egg (beaten) Substitute with a flax egg for egg-free version.
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour Use gluten-free flour blend for gluten-free version.

For the Cinnamon Swirl

  • ¼ cup brown sugar
  • 1 tablespoon ground cinnamon

For the Sweet Icing

  • 1 cup powdered sugar
  • 2 tablespoons milk (or cream) Use dairy-free milk for a dairy-free version.
  • ½ teaspoon vanilla extract

Instructions
 

Preparation

  • Gather all ingredients and preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  • In a mixing bowl, mash the ripe bananas until smooth.
  • Add the melted butter to the mashed bananas and mix well.
  • Stir in the sugar until well combined, then add the beaten egg and vanilla extract.
  • In a separate bowl, mix the flour, baking soda, and salt.
  • Gently fold the dry ingredients into the wet mixture until just combined.
  • In a small bowl, mix brown sugar and cinnamon for the swirl.
  • Pour half the banana batter into the prepared loaf pan and sprinkle half the cinnamon sugar mixture over it.
  • Add the remaining batter and sprinkle on the remaining cinnamon mixture, then swirl lightly with a knife.
  • Bake for 60-65 minutes or until a toothpick inserted in the center comes out clean.
  • Cool in the pan for 10 minutes, then transfer to a wire rack.
  • Whisk together powdered sugar, milk and vanilla for the icing and drizzle it over the cooled bread.
  • Let the icing set for a few minutes before slicing.

Notes

Best enjoyed fresh, but can be stored in an airtight container. Customize with nuts or different icing flavors.
