Brew one cup of coffee and allow it to cool completely.
In a blender, combine cooled coffee, milk, vanilla ice cream, vanilla syrup, and ground cinnamon.
Blend on high for 30–45 seconds until smooth and frothy.
Taste and adjust sweetness by adding more vanilla syrup if desired, then blend again briefly.
Pour into tall glasses. Top with whipped cream and sprinkle with Cinnamon Toast Crunch cereal.
