Preparation

  • Gather and prepare all ingredients: dice the beef, vegetables, and mince the garlic.

Cooking the Base

  • In a large pot, brown the beef chuck over medium heat until it develops a nice brown crust.
  • Add the chopped onion and minced garlic, cooking until the onion is translucent and fragrant, about 3-5 minutes.
  • Stir in the diced carrots and peas, along with the thyme and rosemary, allowing them to release their aroma for about 2 minutes.
  • Pour in the beef broth and season with salt and pepper to taste. Bring to a simmer for about an hour.

Assembly

  • Roll out the puff pastry on a floured surface to about 1/8 inch thick.
  • Fill a pie dish with the beef and vegetable mixture. Cover with the rolled-out pastry, cutting slits for venting steam.
  • Brush the pastry with the beaten egg for a golden crust.

Baking

  • Preheat your oven to 425°F (220°C) and bake for 25-30 minutes, until the crust is golden.
  • Allow to cool slightly before serving.

Notes

Customize by adding different vegetables or spices. Omit the egg wash for a dairy-free option. Store in the refrigerator or freeze for later use.
