  • 15 oz ricotta cheese
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • ½ cup mini chocolate chips
  • ¼ cup chopped pistachios optional
  • Cocoa powder for dusting optional

Preparation

  • Gather all your ingredients, ensuring they’re at room temperature for best results.
  • Lightly flour your work surface and roll out the puff pastry sheets. Cut them into squares aiming for about 3-inch squares.

Baking

  • Place the pastry squares on a baking sheet lined with parchment paper.
  • Bake in a preheated oven at 400°F (200°C) for 12-15 minutes, until golden brown, then allow to cool completely.

Filling Preparation

  • In a large mixing bowl, combine the ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
  • Gently fold in the mini chocolate chips.

Assembly

  • Spread a generous layer of the ricotta mixture over each cooled pastry square.
  • Sprinkle the tops with chopped pistachios and dust with cocoa powder if desired.
  • Cut the squares into portions and serve immediately.

Notes

Store in a covered container in the refrigerator for 3-5 days. Best enjoyed right after assembly; avoid stacking to prevent smudging. For freezing, wrap securely and store in an airtight container for up to two months.
