  • 1 lb ground beef
  • 1 cup breadcrumbs
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • ¼ cup milk
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried thyme

For the Creamy Mashed Potatoes

  • 4 medium Yukon Gold potatoes, peeled and chopped
  • ½ cup heavy cream
  • 4 tbsp butter

Preparation

  • Prep your workspace and ingredients by gathering all needed tools and ingredients.
  • Preheat the oven to 350°F (175°C).

Making the Meatloaf

  • In a large mixing bowl, combine ground beef, breadcrumbs, chopped onion, minced garlic, egg, milk, salt, pepper, and thyme. Mix until combined.
  • Shape the mixture into a loaf in a greased baking dish.
  • Bake in the preheated oven for about 1 hour, or until the internal temperature reaches 160°F (70°C).

Preparing the Mashed Potatoes

  • While the meatloaf is baking, boil a pot of salted water. Add chopped Yukon Gold potatoes and cook for 15-20 minutes until tender.
  • Drain the potatoes and return them to the pot.
  • Add heavy cream and butter. Mash until smooth and creamy.

Serving
