  • 1 box (8.5 oz) cornbread mix

  • 1 cup shredded cheese (optional) Cheddar or Monterey Jack recommended

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the drained corn kernels, creamed corn, cornbread mix, sour cream, and melted butter. Stir until smooth.
  • If using, fold in the shredded cheese until evenly distributed.
  • Grease your baking dish and pour the mixture into it, smoothing the top with a spatula.
  • Sprinkle salt and pepper over the top.

Baking

  • Place the baking dish in the preheated oven and bake for 45-55 minutes, until the top is golden brown.
  • Check for doneness by inserting a toothpick into the center. If it comes out clean, it is ready.

Serving

  • Let the casserole cool for a few minutes before cutting into squares and serving.

Notes

For variations, consider adding black beans and jalapeños for a spicy twist or vegetables like diced peppers for extra nutrition. This dish can be made ahead of time and stores well in the refrigerator for 3-5 days.
