  • 1 cup chopped nuts (walnuts, pecans, or almonds)

  • 1 cup brown sugar Can reduce for a lighter version.
  • 4 large eggs Can substitute with flaxseed meal or commercial egg replacer for a vegan version.
  • 2 cups all-purpose flour Use gluten-free flour for a gluten-free version.
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ¼ cup orange juice Enhances flavor; can be substituted with a different juice.

Instructions
 

Preparation

  • Start by measuring out all your ingredients.
  • In a bowl, sift together the all-purpose flour, baking powder, ground cinnamon, ground nutmeg, and salt.
  • In a separate bowl, mix together the dried fruits and chopped nuts.
  • In a large bowl, cream the softened unsalted butter and brown sugar together until you achieve a light and fluffy consistency.
  • Add the eggs one at a time to the butter-sugar mixture, mixing well after each addition.
  • Gradually add the dry mixture to the wet mixture, mixing gently until just blended.
  • Gently fold in the dried fruit and nut mixture.
  • Pour in the orange juice and give it a final mix until incorporated.
  • Grease your cake pan adequately.

Baking

  • Pour the batter into the prepared cake pan.
  • Bake in a preheated oven at 325°F (160°C) for 60-70 minutes.
  • A toothpick inserted should come out clean when it's ready.

Cooling

  • Once baked, let the cake cool in the pan for about 10 minutes.
  • Transfer it to a wire rack to cool completely before slicing.

Notes

To elevate the fruitcake, consider adding glazes or icings. Allowing the cake to sit for a day or two before slicing can enhance the flavors.
