Ingredients
  

For the Crust

  • 1 cup all-purpose flour Can substitute with gluten-free flour.
  • ¼ cup powdered sugar
  • ½ cup unsalted butter, softened Coconut oil or vegan butter can be used for a dairy-free option.

For the Lemon Filling

  • 1 cup granulated sugar
  • 2 large eggs Can substitute with flax eggs for a vegan option.
  • ¼ cup fresh lemon juice Fresh juice preferred for the best flavor.
  • 1 tablespoon lemon zest Enhances the flavor.
  • ½ teaspoon baking powder
  • powdered sugar for dusting

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the flour and powdered sugar. Add the softened butter and blend until crumbly.
  • Press the crumbly mixture into the bottom of a greased baking dish for a sturdy crust.
  • Bake the crust for about 15 minutes until light golden.
  • In a separate bowl, whisk together the granulated sugar, eggs, lemon juice, lemon zest, and baking powder until smooth.
  • Pour the lemon mixture over the warm crust.
  • Bake again for 20 minutes until the filling is set but jiggly in the center.
  • Let the lemon bars cool completely in the dish and dust with powdered sugar before cutting into squares.
  • Serve chilled, at room temperature, or warm with a touch of powdered sugar on top.

Notes

Store in an airtight container in the fridge for up to a week or freeze for up to three months.
