Ingredients
  

For the Meatloaf

  • 1 lb ground beef (80/20 blend) Can be substituted with turkey, chicken, or a meat substitute
  • 1 cup breadcrumbs (plain or Italian) Gluten-free breadcrumbs or oats can be used as substitutes
  • 2 large eggs Use flaxseed meal or a commercial egg replacer for a vegan option
  • 1 medium onion, finely chopped Shallots or leeks can be used instead
  • 2 cloves garlic, minced Fresh minced garlic enhances flavor
  • ½ cup ketchup (plus more for glaze) BBQ sauce can be used as an alternative
  • 2 tbsp brown sugar (for glaze) Honey can be substituted
  • 1 tbsp Worcestershire sauce
  • 1 tbsp mustard (yellow or Dijon) Optional
  • to taste salt and pepper

For the Glaze

  • ½ cup ketchup
  • 2 tbsp brown sugar Or honey
  • splash apple cider vinegar
  • 1 tbsp mustard Optional for extra flavor

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Gather all necessary ingredients and tidy up your kitchen.

Cooking

  • In a skillet, add olive oil over medium heat and sauté the finely chopped onion for around 5-7 minutes until translucent.
  • Add minced garlic and sauté for an additional minute.
  • In a large mixing bowl, combine ground beef, sautéed onion and garlic, breadcrumbs, eggs, Worcestershire sauce, salt, and pepper. Mix gently.
  • Transfer the mixture into a prepared loaf pan and shape into a loaf.
  • In a bowl, whisk together 1/2 cup of ketchup, brown sugar, and apple cider vinegar for the glaze. Pour half of the glaze over the meatloaf.
  • Bake in the oven for approximately 1 hour checking for an internal temperature of 160°F (70°C).
  • Baste with the remaining glaze halfway through baking.
  • Let the meatloaf rest for about 10 minutes before slicing.

Serving

  • Slice the meatloaf and serve with your favorite sides.

Notes

Great for leftovers. Can be reheated or incorporated into other meals. Customize ingredients based on preference.
