  • 1 cup raw pumpkin seeds rinsed and dried
  • 1 tsp salt or to taste
  • 2 tbsp olive oil or melted butter for roasting

Instructions
 

  • Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  • In a bowl, combine the rinsed and dried pumpkin seeds with olive oil (or butter) and salt. Toss until evenly coated.
  • Spread the seeds in a single layer on the prepared baking sheet to ensure even roasting.
  • Roast for 20–25 minutes, stirring every 10 minutes to prevent burning and promote even browning.
  • Once golden brown and crispy, remove from the oven and season with additional salt if desired.
  • Allow the seeds to cool completely before serving or storing in an airtight container.

Notes

Try adding garlic powder, smoked paprika, or a sprinkle of cayenne for a spicy version. For a sweet twist, drizzle with honey or maple syrup before roasting. Store cooled seeds in an airtight container for up to 3 weeks.
