Dumplings and Seasoning

  • 1 bag frozen vegan dumplings 12 to 15 pieces
  • 1 tsp soy sauce Or tamari for gluten-free version
  • 1 tsp salt Adjust to taste
  • 1 tsp sugar Balances flavors

Garnish and Extras

  • 2-3 tsp chili oil Add for heat
  • 4 scallions chopped For freshness and garnish
  • 1 tbsp chopped cilantro Fresh garnish
  • 1 tbsp sliced scallion greens For topping
  • 1 tbsp crunchy garlic For extra texture and flavor

Preparation

  • Gather all your ingredients. Dice the onion, mushrooms, and scallions. Mince the garlic.

Cooking the Base

  • In a large pot, heat 1 tablespoon of avocado oil over medium heat.
  • Add the diced onion and sauté for about 3 minutes until it becomes translucent.
  • Stir in the minced garlic and let it cook for another minute, until fragrant.
  • Add the chopped cremini mushrooms to the pot and sauté for around 3-4 minutes until they soften.

Building Flavors

  • Pour in the vegetable broth and increase the heat to high. Bring to a gentle boil.
  • Once boiling, reduce heat and stir in 1 cup of full-fat coconut milk.
  • Add 1 tablespoon of red Thai curry paste and stir well to dissolve.
  • Season with salt, sugar, and soy sauce.

Final Steps

  • Carefully add the frozen dumplings into the simmering broth and cook according to package instructions, usually around 5-7 minutes.
  • Just before serving, stir in the chopped scallions and drizzle in chili oil.
  • Ladle the soup into bowls and top with fresh cilantro, sliced scallion greens, and crunchy garlic.
