Preparation

  • In a large bowl, combine the coconut milk and heavy cream. Add sugar and whisk until completely dissolved.
  • Stir in lime juice, lime zest, and vanilla extract until evenly distributed.
  • Cover the bowl and chill in the refrigerator for at least one hour.

Churning and Freezing

  • Set up your ice cream maker according to the manufacturer’s instructions.
  • Pour the chilled mixture into the ice cream maker and churn for about 20-30 minutes until it reaches a soft-serve consistency.
  • Transfer the churned ice cream into an airtight container and smooth the top to minimize air pockets.

Notes
