Preparation

  • Gather all your ingredients to make the cooking process smoother.
  • Preheat your oven to 350°F (175°C) and mix the graham cracker crumbs with melted butter in a bowl.
  • Press the mixture firmly into the bottom of a lined baking dish to form the crust. Bake for 8-10 minutes until lightly golden, then allow to cool completely.
  • In another bowl, beat the coconut cream with powdered sugar until smooth and fluffy.
  • In a separate bowl, whip the heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the coconut mixture.
  • Fold in the drained crushed pineapple and pineapple juice (and gelatin if using).

Assembly

  • Pour the coconut filling over the cooled graham cracker crust and spread it evenly.
  • Chill in the fridge for at least 4 hours or until the filling is set.

Serving
