Ingredients
  

Muffin Base

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract

Crumble Topping

  • ½ cup brown sugar
  • ¼ cup all-purpose flour For topping
  • ½ teaspoon ground cinnamon For topping

Preparation

  • Gather all your ingredients before you start for a smoother preparation.
  • Preheat your oven to 350°F (175°C).
  • Line a muffin tin with paper liners or grease with butter or cooking spray.

Mixing Ingredients

  • In a large bowl, whisk together the flour, sugar, baking powder, salt, and ground cinnamon.
  • In another bowl, blend the melted butter, milk, eggs, and vanilla extract.
  • Pour the wet mixture into the dry ingredients and stir gently until just combined.
  • In a separate bowl, mix together the brown sugar, flour, and cinnamon for the crumble.

Baking

  • Fill each muffin cup about halfway with batter, sprinkle crumble topping, and then fill with more batter until 3/4 full.
  • Top each muffin with more crumble and bake for 18-20 minutes until golden brown.

Notes

Store in an airtight container for up to 3 days at room temperature. Muffins can be frozen for up to 3 months.
