  • ¼ cup brewed coffee, cooled

For the Glaze

  • 1 cup powdered sugar
  • 1-2 tbsp brewed coffee for glaze Adjust for desired consistency.

Preparation

  • Gather all your ingredients beforehand to ensure a smooth baking process.
  • Preheat your oven to 350°F (175°C).

Mixing Ingredients

  • In a bowl, whisk together all-purpose flour, baking soda, and salt.
  • In a separate bowl, cream together softened butter and granulated sugar until light and fluffy.
  • Add egg, vanilla extract, and cooled brewed coffee to the creamed mixture and beat until smooth.
  • Gradually mix in the dry ingredients until just combined, being careful not to overmix.

Baking

  • Drop tablespoons of dough onto a parchment-lined baking sheet, leaving space for spreading.
  • Bake for 10-12 minutes or until edges are lightly golden.
  • Allow cooling on the baking sheet for a few minutes before transferring to a wire rack.

Glazing

  • In a small bowl, combine powdered sugar and brewed coffee to make a glaze.
  • Once cookies have cooled, drizzle glaze over the tops.
