  • 2 tablespoons olive oil For sautéing

  • 1 tablespoon apple cider vinegar Adds tanginess

Preparation

  • Wash the collard greens thoroughly to remove any dirt. Remove the stems and chop the leaves into bite-sized pieces.

Cooking

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent and soft, about 5 minutes.
  • Stir in the minced garlic and cook for 1-2 minutes until fragrant, being careful not to burn it.
  • Add the chopped collard greens to the pot, stirring to coat with the oil, onions, and garlic. Let them wilt down slightly for about 5 minutes.
  • Pour in the vegetable broth, ensuring the collard greens are submerged.
  • Raise the heat to high until simmering, then reduce to low, cover, and cook for 30-40 minutes until tender.
  • Once tender, stir in the apple cider vinegar.
  • Taste and season with salt and pepper as desired.

Notes

Serve as a side dish for family gatherings or potlucks. Consider pairing with cornbread or fried chicken for a complete meal. Leftovers can be refrigerated or frozen for later use.
