  • 1 each yellow bell pepper, sliced
  • 1 each zucchini, sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced

Preparation

  • Begin by gathering all your ingredients. Wash and slice the red and yellow bell peppers, and the zucchini. Mince the garlic.

Cooking

  • In a large mixing bowl, combine the sliced chicken, bell peppers, zucchini, olive oil, minced garlic, salt, and pepper. Toss until everything is evenly coated.
  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
  • Spread the chicken and vegetable mixture evenly on the baking sheet in a single layer.
  • Place the baking sheet in the preheated oven and bake for 25-30 minutes.
  • Check that the chicken has reached an internal temperature of 165°F (75°C) and the vegetables are tender.
  • Once baked, let the dish rest for a few minutes, then sprinkle fresh herbs on top before serving.

Notes
